Help Wanted!

Okay, so I'm getting quite proud of myself for actually looking at new recipes and trying them... I'm not a risk taker, by any means. Then my darling daughter decides to throw a loop into the whole thing for me and chooses to become vegetarian.

Now what am I supposed to do? I've prepared all these meals in advance. I took her to the health food store... and she actually gets a job there... she wore her Eeyore hat, and everything! Besides that I get razzed, by a friend who also works there, because she paid for her own food. What's with that? She doesn't eat what I serve, tough luck!
So now, I'm trying to help her out. Okay, beans are supposed to replace eating meat. So I make up a big batch of refried beans today, and after I'm done I realize I threw in some bacon bits. Oh well, she's not likely to read this, and it all gets blended together, so what she doesn't know won't hurt her.
I then went on to make some cream of spinach soup, so she could enjoy that... and when I was finished, realized I put the suggested chicken broth into it, rather than the vegetable broth she had bought.
Any suggestions? I'm really only making myself frustrated!

Buy her a vegetarian cookbook (oh wait, she can probably get a discount on one now that she works at the health food store) and wish her the best of luck on her newest endeavor!:)

Hi Dawn, I missed this one when you originally posted it, that's why I'm getting in here almost a month later.

I guess I should first ask if she's still vegetarian.... at that age they can switch fads pretty quickly, I know I went through it for a while.

Yes, she's still vegetarian, however I am suspecting she's a bit anemic too, so she's checking with the Dr. today.
